Here is another cheap but great recipe! It cost me under $10 to make this, I already had most of the ingredients on hand but if you don’t have all of it, it will probably cost close to $20. Keep in mind, there are leftovers for lunch tomorrow, so well worth it!
Ingredients:
1 Lb Ground Beef
2 (28 oz) Cans Crushed Tomatoes
1 Can Black Beans
1 Can Dark Red Kidney Beans
1 Can Light Red Kidney Beans
1 Large Red Bell Pepper (diced)
1 Large Green Bell Pepper (diced)
1 Medium Yellow Onion (diced)
1/4 Evoo
1 Tablespoon Iodized Salt
4 Tablespoons Cumin
1 Tablespoon Chili Powder
1 Tablespoon Red Pepper Flakes
First, start by warming up the pot, after it has been heated add the Evoo, let the oil warm up then add the diced onions. Let the onions sauté for about 10 mins on low heat. Once the onions are sautéed, add the ground beef to the pot cooking it at med high heat, breaking it up as it is cooking.
Once the ground beef is done cooking add the diced peppers, and sauté for 2 minutes on medium high heat, then add the Cumin, Salt, Chili Powder and Red Pepper Flakes.
Let that cook for an additional 2 mins, then add the Crushed Tomatoes, Light Red Kidney Beans, Dark Red Kidney Beans and Black Beans.
Stir everything up and let that cook for 30 minutes on low heat with the pot covered! Once it’s done, serve over rice with shredded cheese on top if you want!
