Sausage Egg and Tater Tot Casserole

Hey guys, I’m back with another great breakfast recipe! This Sausage Egg and Tater Tot Casserole is prepared in advance and sits in the fridge overnight, so it’s the perfect brunch food! Everyday from December 1st to Christmas day I am doing a Countdown to Christmas series! I will be showing you all Christmas crafts, offering a free printable or a favorite Christmas recipe! This recipe was given to me by my husbands aunt and is a favorite with everyone I’ve made this for, the past five years I have hosted Christmas brunch for the kids and their friends, everyone comes over in their Christmas pajamas and is supposed to “watch” a Christmas movie that never gets watched! This is the one dish that there is never left overs of and is a huge hit with everyone.
I have been meaning to share this recipe with all of you for awhile but I never got around to it. Now, I’m finally sharing it with you all! This breakfast casserole is a staple for Christmas morning breakfast because you prep everything the night before and throw it in the oven the next day, which still gives me plenty of time to watch the kiddos open their presents!

Who doesn’t love sausage and tater tots?! This is also a perfect breakfast comfort food during the winter months.
INGREDIENTS:
2 Boxes Sausage Patties
4 Eggs
2 Cups Shredded Cheddar Cheese
2 Cups Whole Milk
1/2 Bag Frozen Tater Tots
Salt and Pepper to taste
8×8 Baking Dish (here)
Step 1:
Cook sausage patties and layer the bottom of an 8×8 dish with the sausage. You can use links, but it’s much easier to cut into the patties. If you are using links, slice them in half lengthwise.
Step 2:
Scramble 4 eggs and stir in milk and cheddar cheese. Carefully add in the salt, the sausage is very salty so you really don’t need a lot.
Step 3:
Pour the egg mixture over the top of the sausage, and wrap. Let that sit overnight in the fridge.
Step 4:
Pour a generous amount of tater tots on top and cook at 350 degrees for 1 hour.
How easy was that?! That’s why it’s a must in my house! I like anything that can be prepared in advance, especially when it goes right into the oven! For my Christmas morning drink, try this: Christmas Cranberry Punch.
