Farmer’s Casserole
This Farmer’s Casserole recipe is a very easy breakfast recipe that can also be made in advance. It’s the perfect recipe to serve when you have a house full of guests.
Farmer’s casserole is a delicious breakfast casserole that is made with a few simple ingredients. It calls for hash browns, eggs, cheese, ham, scallions and evaporated milk. It’s all baked together to create a perfect baked breakfast casserole. This is also a great way to use up leftover ham!
I have made this recipe for Christmas brunch, Easter morning, and more. Everyone enjoys this so much, and did I mention how easy it is to prepare?!
I don’t recommend using regular milk instead of evaporated milk, it becomes too watery. You can find evaporated milk in the baking aisles of your store.

Grease a large rectangular baking dish. Arrange hash browns evenly in the bottom of the dish. Sprinkle with cheese, ham, and scallions.
In a large mixing bowl, combine eggs, milk, salt and pepper. Pour the egg mixture over potato mixture.
When ready to bake, preheat oven to 350°F. Cover with foil and bake for 45 minutes, then bake uncovered for 35 minutes. Let stand for 5 minutes before serving. If baking after casserole has been chilled, you will need bake for 1 hour and 30 minutes.
