No Bake Power Bites
These No Bake Power Bites are so easy to make and a HUGE hit with my kids. These nutritious packed power bites are great for those days when you just need a little extra energy.
I usually always have these ingredients in the pantry, so I can whip them up in no time. This is also the perfect make-ahead recipe to keep on hand for healthy snacking.

STEPS:
- Place all ingredients into a bowl, reserve a half cup of shredded coconut in a bowl to the side.
- Mix until well combined.
- Line the muffin pan with liners.
- Scoop the mixture into the muffin pan, and press firmly into place.
- Top the mixture with the shredded coconut.
- Put the muffin pan into the refrigerator to chill for an hour. Once chilled, pop all the bites out.
